Description	The project is aimed on the study of the possibility of the foodborne pathogens penetration from the raw cow milk into the final products. Furthermore is aimed on the development of the method for the determination of the contamination origin with according to the genom identity of some chosen foodborne pathogens by using PCR and other molecular-biological methods. The principle of this project is a comparison of the genetic identity of the isolated strains from the raw milk, pasteurized milk and milk products within the following microorganisms: Bacillus cereus, Staphylococcus aureus, Listeria monocytogenes, Escherichia coli O157 and sulfate reduction Clostridium. (en) Projekt je zaměřen na studium možnosti průniku potravních patogenů technologií od syrového mléka po finální výrobek. Dále je zaměřen na vývoj metody určení původu kontaminace během sledované technologie podle shodnosti genomu vybraných potravních patogenů pomocí metod PCR a dalších molekulárně biologických metod. Podstatou projektu je srovnání genetické shodnosti izolovaných kmenů během zpracování jedné šarže mléka z kritických bodů: syrové mléko, pasterované mléko a finální výrobek u vybrané skupinymikroorganismů: Bacillus cereus, Staphylococcus aureus, Listeria monocytogenes, Escherichia coli O157 a sulfit redukující klostridia.
