| Description
| - Biogenic amines are hygienically important compounds, mainly with negative, in limited situations with positive impact on human health. Their role in human nutrition is not satisfactorily clarified yet. Moreover their toxicological importance some biogenic amines, especially polyamines, can serve as indicators of the protein matrices of foods. As qualitative criterion these compounds can serve mainly at nonfermentad foods with high contents of proteins (e.g. meat). This study has two main objectives. First of them is the finding of average intake of biogenic amines in the diet in the Czech Republic. The main accent is given to polyamines, because information of their intake is scarce. The second objective is the study of the formation of biogenic amines in the meat of fresh water fish species, where amines serves as quality markers. A proper settlement of the task will contribute to the readiness of the Czech Republic in the on-coming time of unifying of nutritional standards with EU. (en)
- Biogenní aminy jsou zdravotně významné látky převážně s negativním, v omezených situacích však též s pozitivním dopadem na lidské zdraví. Jejich role ve výživě není dosud uspokojivě vysvětlena. Kromě své toxikologické významnosti mohou některé biogenní aminy, zvláště polyaminy, sloužit jako indikátory rozkladu bílkovinné matrice potravin. Jako kvalitativní kritérium tak mohou tyto látky sloužit především u nefermentovaných potravin s vysokým obsahem bílkovin (např. masa). Projekt bude mít dva cíle. Prvním z nich je zjištění podkladů pro stanovení průměrné zátěže populace v České republice biogenními aminy přijatými z potravy. Přednostně budou sledovány polyaminy, o nichž je dosud velmi málo poznatků. Druhým cílem bude studium tvorby biogenních aminů v mase sladkovodních ryb, kde tyto látky mohou sloužit jako indikátory rozkladných procesů. Zdárné vyřešení úkolu přispěje k připravenosti České republiky pro sjednocování příslušných potravinových norem v rámci EU. Speciální část projektu
