Description
  • The aim of the project is evaluation of the selected genetic resources of minor crops (buckwheat, emmer wheat, einkorn wheat, amaranth) in relation to the content of antioxidants (polyphenols, phenolic acids, flavonoids, ascorbic acid, tocopherols, and carotenoids spectrophotometrically and with chromatographic methods - HPLC) and antioxidant activity by means of selected spectrophotometric methods (ABTS, DPPH, FRAP). The other objective is to investigate changes of these parameters during vegetation period in individual plant organs and thus offer data for breeding praxis to improving crops quality and for specific use in the food industry.
