  • Přenos tepla z potraviny vložené do chladicí vitriny je kombinací přirozené konvekce, vedení a radiace. Tyto tři mechanismy byly analyzovány teoreticky pro jednoduché tvary chlazených produktů a experimentálně, použitím přesných kovových odlitků salátových kelímků. Byl sledován nejen vliv geometrie, ale především vliv vzájemného uspořádání většího množství vzorků o různých teplotách. Z monitorovaných časových průběhů teplot vzorků a vzduchu v chladicí vitrině byly dopočteny efektivní hodnoty součinitele přenostu tepla a navrženy odpovídající korelace. (cs)
