  • Pro stanovení antioxidační kapacity roztoků byla zvolena metoda, kdy byly generovány hydroxylové radikály v přebytku termickou katalyzovanou reakcí peroxidu vodíku, případně fotochemickou reakcí. Hydroxylové radikály byly identifikovány a stanoveny metodou spinového záchytu (Spin Trapping EPR). Optimální metodou pro identifikaci a stanovení hydroxylových radikálů je spektroskopie elektronové paramagnetické resonance (EPR). Byly zpracovány hrozny odrůdy Svatovavřinecké 8 maceračními postupy, které jsouv současnosti nejvíce používány a ve zpracovatelské praxi diskutovány. Pro všechny technologické varianty byly použity hrozny ze stejné sklizně, oblasti a vinohradnické trati. Tyto vzorky byly analyzovány na obsahy veškerých polyfenolů, resveratrolu, k. gallové, katechinu, epikatechinu a měřena antioxidační kapacita. (cs)
