  • The aim of the paper was to extend the knowledge about current FA profile of cow milk fat as food raw material after period of expressive changes in dairy cow keeping and about possible impacts of some farm factors on this FA profile. 64 bulk milk samples (BMS) were obtained 2 times in winter and summer season in 8 dairy herds for 2 years. 4 herds were with Czech Fleckvieh (CF) and 4 with Holstein (H) breed dairy cows. Results of FA profile were expressed as saturated FAs (SAFA) and unsaturated FAs (USFA). SAFA, USFA and CLA are in relationship to consumer health state as known, SAFA in negative and USFA and CLA in positive way. CLA difference was marked 0.80 > 0.55% (P<0.05). The impact of MY (low (Lo) : high (Hi)) on CLA was marked (P<0.001) within breeds: CF 1.14 > 0.46%; H 0.72 > 0.39%. In general, high MY without pasture reduced milk fat CLA content.

  • Cílem bylo rozšířit znalosti o současném profilu FA tuku kravského mléka jako potravinové suroviny po období výrazných změn v chovu dojnic a o možných dopadech některých chovatelských vlivů na tento profil FA. 64 bazénových vzorků mléka (BMS) bylo získáno dvakrát v zimní a letní sezóně od 8 stád dojnic během 2 roků. 4 stáda byla s kravami plemene České strakaté (CF) a 4 plemene Holštýn (H). Výsledky FA profilu byly vyjádřeny jako nasycené FA (SAFA) a nenasycené FA (USFA). SAFA, USFA a CLA jsou jak známo ve vztahu ke zdravotnímu stavu konzumentů, SAFA negativním a USFA a CLA pozitivním způsobem. Rozdíl u CLA byl zřetelný 0,80 > 0,55% (P<0,05). Vliv MY (nízká (Lo) : vysoká (Hi)) na CLA byl uvnitř plemen zjevný (P<0,001): CF 1,14 > 0,46%; H 0,72 > 0,39%. Vysoká MY bez pastvy obecně snižovala obsah CLA mléčného tuku. (cs)
