Description
  • In order to extend diversity of cultivated crops and to recommend their suitable utilisation two groups of cereals and pseudocereals were investigated. The first group is the crops grown in a small extent with minimal utilisation if food industry. The other group concerns the crops not grown yet. The basic food components as well as minor nutrients of both groups were determined. The analyses include dry matter, ash, proteins, dietary fibre and fat determination. The attention was aimed at the determination of fatty acids, aminoacids, minerals, lipophilic and hydrophilic vitamins. The mentioned cereals and pseudocereals will be proposed for healthy food production and dietary product recipes.
