Description
  • The younger varieties of spring barley are characterized with markedly lower hordein polymorphism than the older varieties in the studied set. The selected set of varieties shows breeding progress in malting quality of spring barley, mainly in the area of starch modification and proteolytic modification. Amylolytic modification of the historical varieties corresponds to the current requirements. Acceptable level of cytolytic modificationw as found only in the varieties Slovenský 802 and Čelechovický hanácký; the other varieties studied showed only weak activity of cytolytic enzymes. Wort quality in terms of today’s requiremnts was the best in the variety Rubín. The historical varieties or hordein lines split off them can be applied purposefully as donors of significant agricultural parameters and characteristics barley for construction of new varieties in the breeding process.
