  • In the frame of the research project dealing with the investigation of the influence of grapevine technology processing on content of chemoprotective polyphenolic substances in wine, the distribution of resveratrol and other phenolic compounds in the berries and stems of the Saint Laurent red vine variety, which is the most spread variety for the production of the red wines in the Czech Republic, have been studied. The samples were extracted with the methanol/water mixture. The content of resveratrol, gallic acid, catechin and epicatechin were analysed by HPLC with DAD detector in the raw berries and in the raw stems. It was found that in the berries ca. 9 mg/kg of the resveratrol as a maximum is present based on the raw material, while the content of resveratrol and other phenolic compounds in the stems is higher.   • V rámci výzkumného projektu, který sleduje vliv suroviny a technologie zpracování na obsah zdravotně prospěšných polyfenolických látek v révových vínech byla sledována distribuce resveratrolu a dalších fenolických látek v bobulích a třapinách révy vinné odrůdy Svatovavřinecké, která je nejrozšířenější odrůdou pro výrobu červených vín v České republice. Vzorky byly extrahovány vodným methanolem. Pomocí vysoce účinné kapalinové chromatografie s DAD detektorem byl sledován v bobulích a třapinách obsah resveratrolu, kyseliny gallové, katechinu a epikatechinu. Bylo zjištěno, že v bobulích je přítomno max. cca 9 mg/kg resveratrolu vztaženo na čerstvý materiál, zatímco v třapinách je obsah resveratrolu a dalších fenolických látek vyšší. Obsah resveratrolu v třapinách je dokonce více než řádově vyšší a dosahuje hodnoty cca 500 mg/kg čerstvého materiálu. Obsah katechinu v třapinách je také cca řádově vyšší než v bobulích a cca 5 x vyšší než obsah epikatechinu. Bobule napadené plísní Botrytis cinerea vykazují v (cs)
