"The aim of the study was to monitor the content of six biogenic amines (histamine, tyramine, phenylethylamine, tryptamine, putrescine and cadaverine) and two polyamines (spermidine and spermine) in 55 samples of cheeses from farm production. The cheeses were sampled at the end of shelf-life. Tryptamine and phenylethylamine were not detected in samples tested. Histamine was detected only in 4 samples at concentrations <25 mg/kg. Spermidine and spermine contents were evaluated as practically negligible (<35 mg/kg). On the other hand, the amount of tyramine, putrescine and cadaverine in many samples was significant, especially in cheeses made from sheep's milk or long-term ripened cheeses. In almost 10% of samples tested the total concentration of biogenic amines (total sum of 8 biogenic amines and polyamines) more than 200 mg/kg was observed.
