"The aim of the presented study was to evaluate various monoacylglycerols as a potential preservative agents in foods. Antimicrobial activity of monoacylglycerols differing in the nature of fatty acid bound was observed on selected gram-positive bacteria, gram-negative bacteria and filamentous fungi. The results show that antimicrobial action of monoacylglycerols depends on the number of carbon atoms and on the presence of double bonds in the molecule of fatty acid. The most active monoacylglycerols had fatty acids with 10, 11 and 12 carbon atoms. Monoacylglycerols of oleic acid and monoacylglycerols of non-traditional fatty acids were not efficient."@en . .
