"The antioxidant activity and total phenolics content of 6 domestic and 4 imported beers in Mongolian markets were evaluated. The content of antioxidant activity was determined as gallic acid equivalents by l,l-phenyl-2-picrylhydrazyl (DPPH) radical scavenging activity, which is based on the ability of a sample to change organic free radicals. The content of total phenolic compounds was determined as gallic acid equivalents by a spectrophotometric Folin-Ciocalteu method. Total antioxidant activity varied from 0.23 to 0.38 mmol GAE/L, and total phenolic content ranged from 88 ± 2.38 to 204 ± 3.50 mg GAE /L in „Hite lager%22 and „Budweiser dark%22 beers, respectively. „Kharkhorin“ and „Jalam khar“ beers also had relatively higher TPC (> 150 mg GAE/L). A linear positive relationship existed between the antioxidant activity and total phenolic acids content of the tested commercial beers (R2 0.73). This result suggests that 73% of the antioxidant capacity of commercial beers accessions results from the contribution of phenolic compounds. Also, it can be concluded that antioxidant activity of beer samples is not limited to phenolics. Activity may also come from the presence of beer antioxidants such as Maillard reaction products, and sulfites, formaldehyde or ascorbate that can be added into the brewing process to improve beer flavor stability, which in this case contributed to 27% of the antioxidant capacity."@en .
