Each slaughtered carcass has of edible forms (meat, liver) and of non edible forms (tendons, bones). These non edible forms are called by-products. The aim of this paper shows utilization of by-products from slaughterhouses. By-products of the meat industry are usually disposed though they contain important proteins (collagen, elastin). These by-products can be processed by enzyme hydrolysis to collagen hydrolysates which can be used in food-, pharmacy- and cosmetics industry and as biodegradable packaging as well.
