"In this research three types of food carrageenans (kappa-kappa, lambda lambda-, i\u00F3ta-iota) were analyzed using light and electron microscopy. Individual types of carrageenans were analyzed in the form of loose powder. Samples of carrageenans for light microscopy were stained by Lugol-Calleja, Toluidine blue and PAS-Calleja. Based on the intensity of the color and size of stained areas of individual fragments of carrageenans PAS-Calleja were evaluated like the most suitable to detect kappa-, lambda-, i\u00F3ta-carrageenan. Images obtained from the scanning electron microscope indicate the morphological differences in the structure between i\u00F3ta-carrageenans and kappa-, lambda-carrageenans."@en . .
