"25" . . "Carrageenans are used in the meat industry, especially as stabilizers and binders and belong to the group of additives with the code E 407. In this research three types of food carrageenans (kappa-kappa, lambda lambda-, i\u00F3ta-iota) were analyzed using light and electron microscopy. Individual types of carrageenans were analyzed in the form of loose powder. Samples of carrageenans for light microscopy were stained by Lugol-Calleja, Toluidine blue and PAS-Calleja. Based on the intensity of the color and size of stained areas of individual fragments of carrageenans PAS-Calleja were evaluated like the most suitable to detect kappa-, lambda-, i\u00F3ta-carrageenan. Images obtained from the scanning electron microscope indicate the morphological differences in the structure between i\u00F3ta-carrageenans and kappa-, lambda-carrageenans. Simultaneously cooked hams with addition of 1% kappa-, lambda- and i\u00F3ta- carrageenan were examined using the light microscope.
