"With the growing interest in a healthy lifestyle and nutrition, the production of bakery products has expanded the number of new species of the cereal bread. This type of bread has a higher amount of crude fiber, minerals, and has a lower GI, which is very important for a healthy diet of consumers. The aim of the study was to assess the change in color of the model bakery rye wholemeal flour, to which were added increasing concentrations of groats. Monitoring of the color change was chosen due to the fact that color is an important indicator of sensory and has predictive value in relation to the conventional consumer acceptance of products. To fulfill the objectives were used image analysis and sensory analysis and the results of these methods were compared with each other."@en . .
