We used ethanol and formic acid for extraction of anthocyanins from wheat. Determination of anthocyaninswas performed by using HPLC. Blue wheat contained 8.3 mg/kg and purple wheat 12.3 mg/kg of anthocyanins. We identified mainly delphinidin 3-glucoside, delphinidin 3-rutinoside, cyanidin 3-glucoside, cyanidin 3-rutinoside and peonidin 3-rutinoside in blue wheat.
