The food-borne pathogens (e.g. Salmonella spp., Campylobacter spp., verotoxigenic Escherichia coli, Listeria monocytogenes ) were found in slaughter animals and the abattoir operations can be the sources of the carcass contamination. Meat cutting and deboning operations, logistic and retail manipulations enhance also the contamination risk.
