"Mechanically separated meat (MSM) is one of the raw materials for the production of meat products. The article describes content of bone fragments in meat products available in the Czech retail market. As a detection method detection of bone fragments with Alizarin Red staining was chosen as an indicator for MSM. Traditional Czech meat products, namely cooked sausages Gothajsk\u00FD, \u0160unkov\u00FD and Junior, frankfurters, wieners, knacker, cooked hams standard quality and extra quality, dry hot smoked sausage Vyso\u010Dina and dry fermented sausage Poli\u010Dan were analyzed. Totally 10 products, five times from 4 suppliers (200 samples) were analyzed. The results show that in the group of cooked ham standard quality and dry fermented sausage Poli\u010Dan the content of bone fragments was not detected. In cooked ham extra quality 5 % of bone fragments were detected. These results demonstrate high quality of these products. In other meat products bone fragmets were detected in 35 % of frankfurters, in 30 % of Wieners, in 40 % of Junior, in 20 % of knackers, in 30 % of Gothajsk\u00FD, in 5 % of \u0160unkov\u00FD and 25 % of dry heat-smoked sausages Vyso\u010Dina. High detection rate of bone fragments in dry heat-smoked sausage Vyso\u010Dina including 30 % of dubious results show that the quality of the raw materials used for this kind of meat product is critical."@en .
