In fact, the assessment of food by human senses took place long befor the creation of this discipline. Sensory analysis is one of the relatively new branches and benefits from the knowledge of many other disciplines. For this reason it can be called a multidisciplinary field. Dynamic development of sensory analysis is under way about 70 years, although its foundations date back to the 16th century.
