The aim of this work was to quantity the total cholesterol content in target milk products (cheeses, yoghurt, whey and sheep cheese). The samples were bought in the supermarkts and in the health food shop and together were analysed 17 samples in parallel setting. For cholesterol extraction was used alkaline saponification (methanolic KOH) and for determination was used reversed-phase high-performance liquid chromatography with isocratic elution and UV detection at 205 nm. The highest content of cholesterol was in mould cheese 60,2 mg / 100g and sheep's cheese - brynza 52,5 mg / 100 g. The lowest content was in whey 2,754 mg / 100g and in kefir 5,9 mg / 100 g.
