"Additives are currently a common part of meat products. In food production were used always, have a meaning and perform a function. It is important to realize that the quality and shelf life of meat products is in many cases dependent on the use of additives. They use and labeling is governed by legislation and their potential adverse effects on the human body are extensively discussed the lay and professional public. This work deals with the identification of additives as raw in meat products, based on their microstructure using the scanning electron microscopy (SEM). The results show that, based on the description of the morphology of additives, we are able to tell them apart, and then detect the substitution of less quality or potentially hazardous substances."@en . . .
