"Cholesterol is natural organic chemical substance in each animal tissue, precursor for the biosynthesis of steroid hormones, bile acids, and vitamin D. Higher daily intake of cholesterol leads to increasing cardiovasculer diseases. The known amount of cholesterol content in food products is important for human health. The total cholesterol content of goats' milk was determined by mean of RP-HPLC method with isocratic elution and UV detection at 205 nm. The saponification with potassium hydroxide in methanol solution was used for the isolation of cholesterol from milk matrix, followed by the extraction of analyt into non polar solvent.
