In the 90th day of age after the fattening was finished, 30 subjects were selected to monitor the carcass yield. Regarding the obtained samples of breast and thigh muscles, it was performed a chemical analysis which showed a statistically highly significant difference (P ? 0.01) between the breast and thigh muscle, specifically as for the following analyzed indicators: crude protein, fat, ash, gross energy (BE).
