Criteria were: distribution saturated and unsaturated fatty acids, distribution important unsaturated fatty acid, especially polyunsaturated fatty acid and level or ratio n-3, n-6 and n-9 FA. The target of our study was chosen oilseeds and legumen. The results show that most quality from oilseeds is linseed oil. Rapeseed oil has ideal ratio n-3: n-6 FA - 1:5. Low quality is sunflower oil. Dietetic most valued oil from legumen is bean oil (high level of n-3 FA), optimal ratio n-3: n-6 FA has lentil, peas, lupine and soybean oil.
