"The aim of this study was to evaluated colour and pH of different meat. For this intention was used the game meat (red deer, roe deer, fallow deer, moufflon and wild boar), which was compared with beef and pork. Colour parameters (L* - lightness, a* - redness, b* - yellowness), haem pigment (Horsney method) and pH value were measured in meat from leg. We found differences between pork meats a wild boar meat in colour, meat from roe deer, fallow deer, red deer a moufflon were darker then beef meat. The least amount of heam pigment we found in pork meat. We did not found differences between yellowness and pH value. pH value for all measured species did not differ significantly and affect the colour is dull."@en . . .
