As some other plant supplements it is listed among allergenic food components therefore in compliance with national legislation its presence has to be indicated on the product package. Especially for the controll of abiding by the legislative requirements but also for the protection of coeliatic people exact and sensitive methods for wheat protein demonstration are necessary. Such sensitive and sound method is e. g. immunohistochemical method that is even more sensitive than reference method ELISA. With the help of these two methods 103 small meat products were examined for wheat protein presence in 2008, in 71 products of which wheat protein has been found yet only in 9 cases it was indicated on the product package."@en . .
