"Concentrations of 15 polycyclic aromatic hydrocarbons in salamis with plant additives were evaluated. The additives were two kinds of wheat-protein and three kinds of soya-protein. After the Soxhlet-type extraction and GPC clean up, the HPLC determination with FLD has been used. Average concentrations of individual PAHs in salamis with additives ranged from 0,003 \u03BCg.kg-1 to 15,766 \u03BCg.kg-1, in salamis without additives 0,002 \u03BCg.kg-1 a\u017E 16,077 \u03BCg.kg-1.
