"In our work we have employed ourselves in microscopic and chemical analysis of various kinds of mechanically deboned meat (MDM). For the analysis we have chosen samples of mechanically deboned poultry meat, so called %22Baader%22 poultry meat and fish MDM. In the named samples we have determined fat, pure muscular protein, collagen and calcium content. Results have been compared with the data found in literature.
