"The aim of this study was to evaluate texture (Warner-Bratzler test) and colour (system CIELAB) of breast male and female wild pheasants. The male and female pheasants were divided into two groups. The first group was stored in cold store between 0 and 2\u00B0C, the second group was stored in the outside temperature. Texture and colour analyses were carried out on days 0, 7, 14, 21, 28. At the beginning of the experiment female pheasant were more tender than male pheasant, at the end of experiment meat from pheasant stored in cold store were more tender. We did not determined significant differences in colour parameters (L*, a*, b*) between group stored in cold store and stored in outside temperature."@en . .
