"The aim of this study was to determine protein, fat, lactose, total solids, non-fatty solids content, freezing point, titratable activity and pH by FT-NIR spectroscopy. Sixty samples of caprine milk were used to calibrate the instrument by partial least squares (PLS) method. Spectra were measured in the reflectance mode with a transflectance cuvette between 10000 and 4000 cm-1, averaging 100 scans.
