"In this study the effect of different storage temperatures of carp muscle (Cyprinus carpio) on the development of some biogenic amines in relationship to other quality parameters (ammonia concentration) and microbiological assesment (total viable counts, coliform bacteria count and psychrotrophic viable count) were studied. A high-performance liquid chromatography method involving pre-column derivatisation with dansylchloride was optimized for the identification and determination of selected biogenic amines. Biogenic amines (putrescine, cadaverine, spermidine, spermine and tyramine) were detected in different concentrations, depending on the storage temperature. The changes of fish quality were determined by increasing of bacteria counts as well as by biogenic amines production in carp muscle. When fish became unsuitable for human consumption, toxicological levels of histamine were detected. The highest level was 333,16 mg.kg-1.
