. . "3"^^ . "It was investigated 92 samples of UHT milk contaminated by spores of 6 strains of Bacillus cereus. The samples of UHT milk were stored by 24 \u00B0C and 4 \u00B0C. The decrease of casein fractions influenced by proteolytic activity of Bacillus cereus was determined using SDS -PAGE. Following changes were found during storage at 24 \u00B0C. It was - casein that dropped at the quickest rate to 42,64 %. Values of - casein and - casein dropped to 55,96 % and 69,2 %. When storing the milk at 4 \u00B0C, the drop of all casein fractions was lower. In - casein, - casein and - casein the drop amounted to 75,9 %, 82,28 % and 84,61 %. The intensity of changes depended on the strain of B.cereus used as well as the temperature of storage. Significant proteolytic activity of Bacillus cereus results in the devolepment of quantitative changes of casein franctions and kvalitative changes of UHT milk."@en . . .
