"Microbial enzymes are major causes of quality deterioration of milk and dairy products. Capillary electrophoresis is used to observing of microbial proteolytic activity in milk. It were investigated samples of UHT milk inoculated by Bacillus cereus, Bacillus subtilis and Bacillus licheniformis. The samples were stored at 24 \u00B0C for one month and at 4 \u00B0C for 4 weeks. Bacillus spp. proteolytic activity was evaluated as a decrease of casein fractions isolated by precipitation to pH 4,6 using capillary electrophoresis. Protein separation by capillary zone electrophoresis was performed on PrinCE 460 (PrinCE Technologies B.V., Netherlands). The analysis was performed in uncoated fused silica capillary column, 75 cm total length, 50cm effective length and 50 μm i.d. UV-detection was performed at 214 nm. A 0,1 M phosphate buffer was used in which pH was adjusted to 2.0 with NaOH. Analysis was run at constant voltage 20 kV and at 25 \u00B0C. The total time of analysis was max. 45 min.
