"Toxoplasma gondii is widespread coccidian parasite which infects humans and many warm-blooded animals. Although most infections are ussually asyptomatic, many complications may occur in immunocompromised patients and in congenitaly infected children. T. gondii is a common parasite of goats that causes abortions or vitality problems of newborns. Ingestion of raw or undercooked meat is a potencial source of human toxoplasmosis. The aim of this study was determination of viability of T. gondii cysts in meat from experimentaly infected goats stored in different conditions and in fermented sausages made from this meat. Meat was cut into pieces about 1 cm size. From one part of meat were made fermented sausages using addition of additives and then maturated. The rest of meat was vacuumed with or without addition of salt and stored at 4\u00B0C. All samples of meat and sausages were digested using modified digestion technique and bioassayed to ICR mice. Mice were euthanised 2 month after infection and examinated for presence of T. gondii with using PCR and ELISA. T. gondii cysts were vital after 3 hours in a freezer but not after 4 hours (-22 \u00B0C). After 7 days in 2,5% salt solution is T. gondii viable, but not after 9 days.
