"The aim of this study was to evaluate the effect of heifer commercial type on the quality of beef carcass and beef meat (dry matter, content of protein, content of fat, content of ash). The values in CIELab system were also monitored. Totally 66 heifers were included in the experiment (24 purebreed Czech Fleckvieh (C), 20 crossbreed C with Galloway (Ga) and 22 crossbreed C with Charolais (Ch)). The selected parameters were evaluated according to the breed of heifers. The results show that the carcass quality was the best in Czech Fleckvieh purebreed or in crossbreed Czech Fleckvieh with Charolaise. Nutrition parameters of beef were significantly different (p < 0.05) only for content of intramuscular fat between C and C x Ga groups. There was detected statistical significance (p < 0.05) in the colour of beef meat between crossbreed C x Ga and others heifers groups.
