Same number of bulk milk samples was obtained in herd of Czech Fleckvieh cows from farm GENAgro \u0158\u00ED\u010Dany, a.s. Purchase was realized once a week. The average values of milk parameters of Holstein cows were as follows: protein content 3.39 g.100g-1, casein content 2.67 g.100g-1, fat content 4.22 g.100g-1, lactose content 4.81 g.100g-1, solids non-fat content 8.81 g.100g-1, titratable acidity 7,09 \u00B0SH, pH acidity 6.68, specific density 1.0302 kg.l-1, rennet coagulation time 215 sec, curd quality class 1.68. Average temperature in stable was 5.00 \u00B0C.
