"The subject of this work was to analyse the influence of slaughtered age and weight, net daily yield, conformation and fattiness classification in the SEUROP system on morphometric analysis of carcasses as well as on carcasses and beef quality. The highest relation was detected among slaughtered weight, body size and the proportions of particular retail cuts carcasses parts and tissues of bulls. The meat quality was not influenced significantly by our investigated factors. Beef storage time prolongation was connected positively with its tenderness increasing."@en . "43210" .
