"The aim of this thesis was to evaluate the possibility of using NIR spectroscopy in the field of quality. The samples were measured on the spectrophotometer FT NIR Antaris in reflectance mode in the entire spectrum (10 000 -- 4 000 cm-1). The method is not sufficiently accurate but also fast, in one measurement can simultaneously determine several parameters at once, can also be used for on-line monitoring in process, without damaging the sample. Groups of edam cheese and edam analogues were analyzed. The aim was to investigate whether the NIR analyzer built-in groups divided according to their properties. The analogues examined the ability of a spectrophotometer to distinguish them from the cheese analogues containing vegetable fat. The distinction between the groups was the method of discriminant analysis. It was confirmed that the method of near infrared spectroscopy can be an important tool for determining the originality of food and also in the fight against food adulteration and consumer protection."@en . .
