"The aim of study was enriched quail eggs by polysaturated fatty acids, focusing on increase content of a-linolenic acid and their metabolits ( eicopentanoic and docosahexanoic acids). Rising the amount of unsaturated fatty acids is achieved enrichment rations for quails with 5 and 7,5% seeds of spanish sage. Samples of quals eggs was divides in thre group: the control group without addition sage; 5% addition of sage and 7,5% addition of sage to their fed. Each group contained 21 pieces of chicken. The measurement made on extracted fat from their eggs. The constution of fat was analyzed by the gas chromatography. The emphasis was made on quantitative and qualitative representation of a-linolenic acid, docosahexanoic (DPA) and eicosapentanoic acid (EPA) as linolenic metabolites. The increasing amount linolenic acid in poultry diets had led to sizeable increase DHA, but EPA did not have expected growth. Targeted increase linolenic acid in poultry diet had influence not only the constituon of fat, also it was influenced sensory characteristics.
