In 2004 ewes were in the first parity (P1) etc. Parity and stage of lactation significantly affected milk yield, acidity, renneting properties and mainly composition of sheep milk. Milk yield increased with increasing number of lactation. The lowest mean's values of total solids, fat, protein and casein contents and the highest lactose were observed in P3 ewes compared to P1 and P2. The total solids, fat, protein and casein contents rose between May and June and then most of the components declined in July and increased until the end of lactation. Lactose followed closely the lactation yield. P2 ewes had a higher mean's titrable acidity in comparison with P1 and P3. The highest titrable acidity was at the end of lactation.
