"Health safety and food quality can be affected by biogenic amines, the products of some microorganisms in cheeses. This work was oriented on creating of isolates collection of microorganisms from cheeses able to produce biogenic amines. The range of various kinds cheeses samples of national or foreign production were used for isolation. Determination of decarboxylase activity by separed isolates plated method and tube cultivated method using MDA bujon and MDA agar were used for orientation. decarboxylated activity of both mentioned cultivated media demonstrates in colorreaction accompanying pH changes. More than 70 isolates with positive reaction were obtained in total.The collection of isolates was further reduced on 48 isolates, for next determinations and study."@en . . "1"^^ .
