"The aim of the work was to evaluate the influence of the producer (K, R) and diameter ( 7 cm a 4,5 cm) of the product on the growth of bakteria of the genus Enterococcus with supposed ability to produce tyramine and histamine in dry fermented sausages. The producers of tyramine and histamine were identified by EN-COCCUS test and genus and species specific polymerase chain reaction. All tested bacterial strains belonged to the species E. faecium. The presence of the gene for tyrosine decarboxylase was confirmed in all cases using PCR. The presence of the gene for histidine decarboxylase was confirmed in most of the analysed strains. The numbers of the enterococci in individual products at the end of the fermentation (28th day) did not differ significantly from each other (P 0.05). At the 70th day, the numbers of the enterococci in the samples of the producer (K) with bigger diameter ( 7 cm) were significantly higher (P 0.05) than in all the other samples (K 4,5 cm , R 4,5 cm, R 7 cm)."@en . .
