"The paper is focused on the study of the feasibility of using the acoustic impulse-response technique to evaluate Edam cheese texture and maturity. Cheese blocks were hit with an impact bar and the acoustic response at the eight points on the cheese surface was recorded. In connection with the results of the classical compression tests performed on the tested cheeses the constitutive equation of the cheese behaviour has been designed.
