"The aim of this study was to evaluate the influence of slaughter weight (SW) on the chosen proportions of particular carcass cuts (neck, shoulder, chuck, filet, loin and round) of holstein veals. The carcass weight was in average 102.5 kg and age at slaughter 133.2 days. The highest correlations we have found for round (r = .99), neck (r = .92), shoulder (r = .90), loin (r = .83), chuck (r = .79) and filet (r = .66). It has been observed the positive linear trend between raising SW and particular carcass cuts. In adition we have found the slaughter weight is significantly (p<0,01) correlated with live weight (r = .97) and age at slaughter (r =.69)."@en . . . "MZLU v Brn\u011B" . . .
