Individual hazards threatening the consumers' health are consequently described from the viewpoint of their occurrence in the environment and foods, their transfer through the food chain, effects on man, and, above all, prevention. Most relevant physical (including radioisotopes), chemical (natural toxicants and carcinogens, contaminants, pesticide, PCB and drug residues, food additives), and biological (spoilage microorganisms, foodborne pathogenic bacteria, viruses, distorted prions or parasites) hazards are presented.
