While it primarily serves as a major animal feed crop, smaller amounts of barley are used in health foods and in the malting process. The size of a barley kernel is one of the main determinants of its quality. Weight per thousand kernels is the usual process indicator of mean kernel size. An additional indicator for malting barley is the amount of grain (free of extraneous material) retained on a 2.5 mm sieve, which should be in the range of 85-90%.
