Regardless to long-term stocking, protein content 11.8-16.4% was not changed verifiably; wet gluten content reversely increased about 3.5% in average. Partial rise of Falling number values was observed (amylases activity decrease), with respect to measurement accuracy of 10% provably for 3 samples only. SDS test was carried out, and it signified gluten net weakening due to long-term stocking.
