"With the help of basic rheological apparatuses, behaviour of wheat flour blends with hemp, teff and chia ones during dough preparation and deformation was described. Apart from rheological apparatuses Brabender, also mixolab (Chopin) as less frequented one in milling branch was tested. According to correlation analysis, some relationships among mixolab and farinograph or amylograph features were verified independently to limited sample set.
