"This study is carried out within the project, which deals with the characterization of varieties of garlic, increasing its quality and finding suitable Czech variety that would provide the highest levels of health beneficial substances, and also were resistant to adverse conditions during the cultivation. Leading beneficial health compounds of garlic are sulfur amino acids S-alk(en)yl-L-cysteinsulfoxidy (ASCO). Garlic contains a number of other biologically active substances such as vitamins, steroid glycosides, prostaglandins and substances with antivirotic effect. The amount of these substances depends on the type of garlic and the growing conditions. To distinguish different kinds of garlic and origin requires a comprehensive analysis of its components. For this purpose, it is therefore appropriate to use the metabolomic fingerprinting aimed global analysis of low molecular weight compounds (typically up to 1500 Da). Metabolomic profiles are obtained by measuring the extract using high resolution mass detector (HR-MS) to analyze a wide mass range in a short time with high accuracy mass.
